Hillary Tun

Food Journey aims to empower individuals who seek to gain a deeper understanding of the relationship between food and different dimensions of our lives: culture, society, wellbeing, (in)justice or healing. The methodology for this project is a historical inquiry. By tracing the history of one’s favorite dish or food item, participants discover its significance in not just shaping our palates, but our society at large.

The project consisted of four main tasks to be completed in a duration of 4 weeks:
Week 1-Task 1: Choosing Favorite Dish. This very task is the beginning of an inquiry designed to ignite participant’s curiosity and engagement.
Week 2-Task 2:Deconstructing Chosen Dish. This step informs participants of what they are consuming, and further roused their interest in food literacy.
Week 3-Task 3: Tracing the Origins of Selected Dishes/Ingredients. The bulk of the project is concentrated in this step where participants make their discoveries.
Week4-Task4:Reflecting and presentingon Findings.Thistaskgivesparticipantsthe opportunity to share and learn together about the discoveries they have made.

The project participation rate was not ideal. Due to its highly flexible nature of the project, participants are able to tackle their inquiry in various means. Some decide to investigate the recipe of the dish while others extracted its historical significance in comparison to its contemporary status. With varying findings, I can only imagine that the impact it has on each individual can only vary too.

I really enjoyed the process of envisioning the project and planning. However, I fell short on implementing it and keeping the participants engaged to successfully execute the project. My project experience really reaffirmed my strength in planning and my weaknesses when it comes to communicating. Aside from these soft skills, I also gained technical skills and learned new functions of WeChat I never knew of before I started the internship! Moreover, I was able to connect with foodies in different career industries and gain aspiration from their respective views on food matter. For those who wish to collaborate on similar projects as mine, I would encourage having a few people team to play off of each other's skills.

1.Choosing the dish: Pumpkin and leafy green soup
I love pumpkin! Usually my mom will cook pumpkin and chicken curry, but because curry tastes heavier, I chose pumpkin and leafy green veggie soup (my aunt’s special recipe), which suits my taste all year long.

Hillary

2.Deconstructing the dish:
1.   Cooking method: Boiled
2.   Ingredients:
○     Pumpkin
○     Leafy greens
○     Onion
○     Dried mini shrimp
These are the ingredients I was able to identify when I first tasted the soup. I did not know what kind of leaves they were. Have to ask my aunt! Dried mini shrimps which gives off a sweet, umami taste.

3.Tracing the dish:
Pumpkin facts:
In the US, Pumpkins go hand in hand with Halloween and Thanksgiving. My first time seeing pumpkin of all sizes from yellow, green to orange color was here. Before, in Myanmar, when my mom cooked pumpkin, they were green and not bigger than the size of my head.
Halloween’s Jack O’ Lanterns and Thanksgiving Pumpkin Pies are the most popular use of pumpkin in the US.
Pumpkins are a member of the gourd family, which includes cucumbers, honeydew melons, cantaloupe, watermelons and zucchini. These plants are native to Central America and Mexico, but now grow on six continents.
Pumpkins are low in calories, fat, and sodium and high in fiber. They are good sources of Vitamin A, Vitamin B, potassium, protein, and iron.
Questions:
○      What is its commodification story?
○     What is its common use in other cultures?

Goal: Cook my aunt’s recipe this weekend
I asked my aunt for the recipe as well so I can try cooking the soup:
1.   Thinly sliced onions
2.   Cubed pumpkins w/wo skin
3.   Seasonal greens
4.   Boil water
5.   Add seasoning: Chicken powder, salt, tamarind powder
6.   Add mini dried shrimps and sliced onions
7.   Add cubed pumpkins (15 mins)
8.   Add seasonal greens
9.   Lastly add a spoonful of rice flour (this is the secret ingredient that will make the soup’s distinguished texture!)

4.Reflecting on the dish:
1.   I don’t have a talent for replicating my aunt’s dish. It just doesn’t taste the same. I wonder if that is because my labor went into making it. I am probably the type of person who enjoys eating what others have cooked. On the other hand, I think the happy occasion in which I ate the pumpkin soup differs from me alone following the recipe.
2.   In looking for other pumpkin soup recipes, I was pleasantly surprised to discover many pumpkin based desserts around the world, especially  Pampoenkoekies, a South African style donut. Can’t wait to try!
3.   The discovery of Pampoenkoekies led me to search for more pumpkin dishes around the world.  I decided to make a map recording various ways pumpkins are served. Check it out below~

4. 思考

4.Tips
